Grilled Salmon (Cedar Plank)

Prepared on a cedar grilling plank, this grilled salmon is well worth the extra time and effort. Honey, lemon zest, minced rosemary, and grainy mustard make this entrée a mouthwatering dish for special occasions. Serve with a side of roasted Brussels sprouts, and enjoy!

Ingredients
  • 2 tablespoons grainy mustard
  • 2 tablespoons mild honey or pure maple syrup
  • 1 teaspoon minced rosemary
  • 1 tablespoon grated lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (2-pound) salmon fillet with skin (1 1/2 inches thick)
  • Equipment: 1 cedar grilling plank (about 15 by 6 inches)
Instructions
  1. Soak cedar grilling plank in water for 2 hours, ensuring it's fully immersed.
  2. Prepare grill for medium-hot charcoal or medium-high heat for gas grilling.
  3. Mix mustard, honey, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  4. Spread the mixture on the flesh side of the salmon and let it sit at room temperature for 15 minutes.
  5. Place salmon on the plank, skin side down. If the salmon is too wide, fold in the thinner side to fit.
  6. Grill covered for 13 to 15 minutes until salmon is cooked through and edges are browned.
  7. Let the salmon stand on the plank for 5 minutes before serving. Enjoy!
