Apple Fritter Muffins

This delicious combination between a donut and a muffin is the perfect winter dessert! You just need one apple to whip up this recipe, and it's simple enough to include the kids' or grandkids' help. Try swapping out the apple for fresh blueberries, raspberries, or pears!

Batter Ingredients

  • 1 large apple
  • ⅓ cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1 ½ cups flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup sugar
  • ⅓ cup butter, softened to room temperature
  • 2 large eggs
  • ½ cup milk

Glaze Ingredients

  • 3 tablespoons sour cream
  • ½ teaspoon vanilla
  • ¾ cup powdered sugar
Instructions

Batter Instructions

  1. Preheat oven to 350°F. Peel and slice apple into thin slices then cut slices into thirds. You can also grate the apple instead of slicing it.
  2. In a medium bowl, combine the apples, brown sugar, and cinnamon.
  3. Allow the fruit and sugar mixture to steep for 15 minutes. This will help the apples to soften and soak up the brown sugar mixture.
  4. Combine the granulated sugar and butter until light.
  5. Beat in eggs, one at a time until just combined (do not overmix). Slowly add in milk and vanilla.
  6. Combine flour, baking powder, and salt in another bowl, then add the dry mixture to the wet ingredients. Stir just until combined.
  7. Grease a muffin pan, then scoop batter into each cup, filling only 2/3 of the way so the batter doesn't overflow while baking.
  8. Bake about 30-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow muffins to cool for 10 minutes, then top with sour cream glaze.

Glaze Instructions

  1. While the apple fritter muffins are baking, mix together the sour cream, vanilla, and powdered sugar in a medium bowl.
  2. Combine until the glaze is smooth.
  3. Set glaze aside until muffins are ready, or place in the refrigerator to thicken.
