Extra Creamy Fruit Parfait

This isn't your average fruit parfait. With cream cheese and Cool Whip added to the base, this extra creamy recipe will disappear in seconds. Your guests will thank you for adding this refreshing snack to brunches, picnics, and other summertime outings.

Ingredients

Yogurt Base

  • 16 oz. cream cheese
  • ¼ cup powdered sugar
  • 8 oz Cool Whip
  • 2 lb yogurt (any flavor)

Granola

  • 5 cups oatmeal
  • ½ package coconut
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 package crushed graham crackers
  • 1 ½ sticks butter
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoon vanilla
  • Mini chocolate chips

Yogurt Base

  1. Blend cream cheese and powdered sugar on high speed until creamy. Add Cool Whip and yogurt and mix until combined. Cover the yogurt mixture and place in fridge until granola is cooled.

Granola

  1. Mix together oatmeal, coconut, brown sugar, sugar, crushed graham crackers, salt, and cinnamon in a large bowl. (Ingredients will be somewhat separated before adding the wet ingredients).
  2. Melt butter in microwave or saucepan. Add vanilla to butter then pour over dry ingredients. Mix well then spread on to cookie sheets covered with parchment paper.
  3. Bake at 350°F, stirring every 15 minutes, for 40 minutes or until browned. When partly cooled, sprinkle mini chocolate chips on top.

  4. Let granola cool completely, then layer your parfaits in small glasses or jars, starting and ending with a layer of granola.
  5. Add fruit of your choice on top (peaches, strawberries, blueberries, etc), then top with a sprinkle of chocolate chips or nuts. Enjoy immediately or keep refrigerated until ready to serve.
