Cooler weather inspires us to dig into our favorite soup recipes - and this one's sure to be a hit!
1 pkg. (9 oz.) cooked spicy sausage links
2 medium sweet potatoes, peeled and cubed
1 onion, chopped
1 green pepper, chopped
2 Tbsp. olive oil
2-14½ oz. cans of chicken broth
14 ½ oz. can of tomatoes with green chilies, drained
15 oz. can black beans, drained
2 Tbsp fresh cilantro
Sour cream and green onions, to taste
In large saucepan, sauté sausage, potatoes, onion and pepper in oil until tender. Stir in broth, tomatoes and beans. Bring to a boil. Simmer ‘til potatoes are soft. Stir in cilantro, sour cream and green onions.
