Ingredients
  • ½ cup lemon-flavored sparkling water or lemonade
  • 6 tablespoons lemon-flavored soda or lemon-flavored sparkling water
  • ¼ cup loosely packed fresh mint leaves, plus more for garnish
  • 2 tablespoons lemon juice
  • 1 cup lemon sorbet
  • 6 large fresh strawberries, hulled and halved lengthwise
Instructions
  1. Using a cocktail muddler or the handle of a wooden spoon, gently crush together lemon-flavored sparkling water, lemon-flavored soda, mint leaves, and lemon juice in a cocktail shaker until mint begins to bruise and tear into pieces. Set aside.
  2. Blend lemon sorbet and strawberries in a blender until smooth, about 30 seconds.
  3. Pour the mint infusion from the cocktail shaker through a fine mesh strainer into the blender; discard solids. Pulse just until combined, about 3 to 4 pulses.
  4. Transfer the blended mixture to a medium-sized freezer-safe bowl or resealable container. Cover and freeze until firm, at least 4 hours or up to overnight (12 hours).
  5. Remove the frozen mixture from the freezer and let it stand at room temperature until slightly softened, about 10 minutes.
  6. Scoop the softened mixture into the blender and process until smooth, about 30 seconds.
  7. Divide the mixture evenly among 4 Champagne flutes or wine glasses.
  8. Garnish with additional mint, serve immediately, and enjoy!
